Herdy's Chocolate Chip Cupcakes
What ewe will need
- Cupcake cases
- Piping bag
- Mixing bowl and spoon
- Sieve
- Weighing scales

This recipe will make approx 10 - 12 cupcakes
Cupcake ingredients
- 175g Butter (at room temperature)
- 175g Self-raising flour
- 175g Sugar
- 100g Chocolate Chips
- 1/2 tsp Baking powder
- 1 tsp Vanilla essence
- 3 Eggs
For the decoration
- 500g Buttercream
- Food colouring
- White royal icing (small block)
- Sprinkles
Method: Pre-Heat the oven to 180 degrees.
Step 1
Add the butter and sugar to a large mixing bowl and beat until light and fluffy. Next, add 3 eggs and sieve in the self-raising flour and baking powder. Give the batter a good mix until it becomes smooth.
Step 2
Once you're happy with the consistency of the batter, add 1 tsp of vanilla essence and the chocolate chips. Fold in gently to make sure you don't knock out any air.

Bake the cupcakes at 180 degrees for 20-25 minutes. Check the cupcakes are cooked by sticking a knife into the centre and make sure it comes out clean. Allow the cupcakes to cool on a wire rack.
Step 4
Now you're ready to decorate. If you're channelling your inner Mary Berry you could make your own buttercream icing, but shop-bought will be just fine. Use food colouring to turn the icing into your favourite herdy colours. Spoon the buttercream mixture into a piping bag and using a circular motion, decorate the top of the cupcakes with the buttercream.
Step 5
Now you're ready to make the cute little Herdy faces. Roll out the white royal icing, approximately 5mm thick. With a small sharp knife, cut out the shape of Herdy's head (you might want to use a picture of Herdy for reference and you can also use a cocktail stick to draw out the shape before you cut). Use a black cake decorating pen to draw on Herdy's eyes and smile.
